By the way, having just spent a week in Tuscany eating every kind of pasta imaginable, I have to tell you I am beginning to wonder if there is not some huge bubbling saucepan of sauce somewhere that does wild boar, game, sausage, beef and - believe it or not - duck and orange sauce. I had all these, and couldn't tell them apart nor which was which!
